PURPOSE OF THE UNIT STANDARD 
This unit standard forms part of the qualifications on level 4 in the abattoir industry and are registered at NQF Level 4 on the National Qualifications Framework. Learners working towards this standard will be learning towards the full qualifications; or will be involved in; or working within the abattoir industry, specialising in meat classification or meat examination. The acquisition of competence against the above standard will add value to the learner and the abattoir industry as a whole.

The qualifying learner is capable of:
  • Demonstrating an understanding of the layout and product flow of an abattoir.
  • Demonstrating an understanding of the planning and design of an abattoir.
  • Demonstrating an understanding of the statutory requirements and grading of abattoirs.
  • Demonstrating an understanding of the use of water in an abattoir.
  • Demonstrating an understanding of the handling and disposal of abattoir effluent. 

  • LEARNING ASSUMED TO BE IN PLACE AND RECOGNITION OF PRIOR LEARNING 
  • Learners accessing this qualification will have demonstrated competence against unit standards in mathematical, computer, numerical and communication studies at NQF Level 3 or equivalent.
  • Learners accessing this qualification will have demonstrated competence against the unit standard Demonstrate a basic understanding of the abattoir industry or equivalent. 

  • UNIT STANDARD RANGE 
  • The statutory requirements for an abattoir will include but not limited to the Meat Safety Act (Act 40 of 2000), Fertilisers, Farm Feeds, Agricultural Remedies and Stock Remedies Act (Act 36 of 1947), Animal Protection Act (Act 71 of 1962), The Stock Theft Act (Act 57 of 1959), The Occupational Health and Safety Act (Act 85 of 1993), Foodstuffs, Cosmetics and Disinfectants Act (Act 54 of 1972) or any amendments.
  • Septic tank guidelines will include but will not be limited to the CSIR technical guide K86 of the Institute for Water Research or any amendments.

    The methods and techniques for handling abattoir effluent are explained according to work site, operational or statutory requirements.

    The use of septic tanks as a method of disposal is discussed in accordance with guidelines.

    The restoration process of the work site is explained according to work site, operational or statutory requirements.
