PURPOSE OF THE UNIT STANDARD 
This unit standard is intended for people who work in a wholesale or retail outlet selling food products that fall within the cold chain.

This unit standard is aimed at ensuring people working in this environment understand the importance of maintaining the requirements of the cold chain in all aspects of their work.

People credited with this unit standard will be able to receive, move, store and date-code cold chain products in a way that prolongs the shelf life of these products. They will also be able to monitor and maintain the temperature of chillers and freezers and report any variances in temperature to relevant persons.

    Identify requirements of products in the cold chain. 

    ASSESSMENT CRITERIA
     

    ASSESSMENT CRITERION 1 
    The concept of the cold chain is explained in terms of the flow of foods through the cold chain from supplier to the sales floor. 

    ASSESSMENT CRITERION 2 
    The effect of not maintaining correct temperatures of foods is explained in terms of the shelf life and characteristics of the product. 

    ASSESSMENT CRITERION 3 
    Food products that form part of the cold chain are identified along with their storage and display requirements. 

    SPECIFIC OUTCOME 2 
    Monitor chillers and freezers. 

    ASSESSMENT CRITERIA
     

    ASSESSMENT CRITERION 1 
    The required temperatures and temperature ranges are explained as they apply to chillers and freezers in the organisation. 

    ASSESSMENT CRITERION 2 
    The method of monitoring and checking temperatures and what to do if the temperature is outside the range is explained in terms of organisational policy and procedures. 

    ASSESSMENT CRITERION 3 
    The requirements for monitoring and checking chillers and freezers are in good working order are explained. 

    ASSESSMENT CRITERION 4 
    Chillers and freezers are monitored to ensure they remain within organisational temperature ranges.

    ASSESSMENT CRITERIA
     

    ASSESSMENT CRITERION 1 
    The requirements for maintaining the cold chain throughout the receiving process is explained as they apply to the various sections of the organisation. 

    ASSESSMENT CRITERION 2 
    The methods for storing cold chain foods applicable to the product are explained in terms of organisational practice. 

    ASSESSMENT CRITERION 3 
    Reserve stock is checked to be date coded and rotated in accordance with organisation policies and procedures. 

    ASSESSMENT CRITERION 4 
    Cold chain products in the department are stored and moved to the shop floor in a manner that maintains the cold chain and prolongs the shelf life of the products. 
    ASSESSMENT CRITERION RANGE 
    Stock rotation refers to first stock to be sold first.
     


    UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
  • This Unit Standard will be assessed by an assessor and moderated by a moderator registered with the relevant accredited ETQA.
  • Assessors should be in possession of a relevant qualification that is at least one level higher than the level of this qualification.
  • Training providers must be accredited by a relevant ETQA.
  • Assessment should include both formative and summative assessment.
